Ingredients:
• 6 skinless, boneless Chicken Breast Halves (cut into bite size pieces)
• 3 large Potatoes (peeled and sliced)
• 1 bunch fresh Cilantro (chopped)
• 1 cup Lemon Juice
• 2 tsp Lemon Pepper
• 2 tbsp Olive Oil

How to make Lemon Cilantro Chicken:
• Mix chicken with ½ cup lemon juice and half of cilantro. Allow the chicken to marinate for 1 hour.
• Combine together the remaining cilantro with ½ cup lemon juice, lemon pepper and 1 tbsp olive oil. Set aside.
• Line the bottom of a 9x12 inch glass baking pan with 1 tbsp olive oil.
• Layer the potatoes and chicken in the dish.
• Pour the lemon pepper mixture over the chicken and potatoes.
• Cover the pan and bake at 350 °F (175 °C) for 30 minutes.
• Uncover the pan and bake for another 10 minutes.

• 1 cup Mayonnaise
• 1/2 tsp ground Nutmeg

• 1 1/2 tsp Cinnamon (grounded)
• 1/2 tsp Salt
• 1/4 tsp Cloves (grounded)
• 3 cup Apples (chopped and peeled)
• 1 cup Raisins
• 1/2 cup Walnuts (finely chopped)
• 2 cups sweetened whipped Cream with Cinnamon (for frosting and filling)

How to make Apple Raisin Cake:
• Blend flour, sugar, mayonnaise, eggs, nutmeg, salt, baking soda, cinnamon, cloves for 2 minutes.
• Grease two baking trays.
• Combine apple, raisins and walnuts.

Ingredients:
• 10g Agar Powder
• 50g Young Coconut Meat
• 150g Sugar
• 3 cups Water
• 500 ml Coconut Milk
• 2 tbsp Sugar
• 1/2 tsp Salt

How to make Agar And Young Coconut Jelly:
• For the Clear Part:
• Boil water in a pan and dissolve half the agar in it, stirring continuously.
• Mix in the sugar slowly even as you stir, till it dissolves.
• Cut the young coconut flesh into thin strips. Let the agar cool down and pour it into the moulds, before it begins to set and leave room on the top. Drop in pieces of young coconut.
• Place in the deep freeze so as to set quickly while you make the topping.

For the Topping
• Mix the agar powder with the coconut milk, sugar and salt and heat until dissolved.
• Top up the jelly moulds with this mixture.

How to make Bi Tua Agar Jelly:
• First of all, clean and chop the Bi Tua leaves, put into a blender and blend until smooth. Sieve the mixture through a fine cloth sieve into a pan.
• Then, add the agar powder, heat until the agar has fully dissolved, but don't let it boil. The you can add the sugar and stir it until dissolved.
• After that, pour it straight into moulds and leave to cool. Agar sets very quickly and it's better to pour it into moulds when hot. You can even pour it into bowls.

• 5 cm Green Ginger (peeled and roughly chopped)
• 3 cups Chicken Stock
• 3 skinless Chicken Breasts
• 200 g thin Dried Noodles
• 1/2 cup Coriander (root, stems and leaves)
• 50 ml Sesame Oil
• 1 liter light Coconut Milk
• 1 tsp Ground Coriander
• 50 ml Fish Sauce
• 4 Garlic Cloves
• 2 Red Chilies
• 1 Lime (juice)
To Serve
• 1/2 cup Mint Leaf
• 3 Green Onions (finely sliced)
• 1 cup Fresh Bean Sprouts
• Lime Wedges

How to make Chicken Laksa:
• Boil water and soak noodles in it. When they are soft, drain out the water and keep it aside.
• Now, take the food processor and make a paste of coriander seeds, fresh coriander, garlic, ginger, chilies and oil.
• Take the chicken breasts and slice them diagonally.
• Now, take a saucepan and fry the paste for a minute, while stirring it well.
• Further, add coconut and stock to it and bring it to boil. Turn the knob to simmer and cook it for 10 minutes.
• Add fish sauce and chicken in it and further cook it for 5 minutes. Add lime juice to it and mix well.
• Take bowls and put noodles in it. Now ladle the soup over them and garnish with bean sprouts, mint leaves, lime wedges and green onions.
